Filipino Adobo Chicken, Sticky Coconut Rice with Banana Leaves

Ingredients

  • 60 ounces Roasted Chicken — shredded
  • 10 ounces SupHerb Farms Fusions® Filipino Adobo
  • 5 cups Sushi Rice
  • 3 cups Water
  • 2 cups Coconut Milk
  • 1/2 teaspoon Kosher Salt
  • 30 Banana Leaves — cleaned and cut into 6″ squares

Preparation

  1. Preheat grill on high.
  2. Place shredded chicken in bowl and toss well with SupHerb Farms Fusions® Filipino Adobo to coat well.
  3. Place sushi rice, water, and coconut milk and kosher salt in rice cooker.
  4. Stir ingredients to mix and close lid and press tab down to cook.
  5. Remove from rice cooker and place in pan and allow to cool.
  6. Place 2 oz of rice in the middle of each banana leaf.
  7. Place 1 ½ oz of chicken on top of rice and wrap banana leaf to enclose everything.
  8. Place banana leaf packages over grill and char each side for one-minute.
  9. Allow to cool slightly before opening and eating.
