Peach Thyme Bellini
- In a heavy saucepan, heat the chopped peaches, sugar, lemon juice and SupHerb Farms Fresh Frozen Thyme over medium heat until the mixture is thick and syrupy, approximately 8-10 minutes.
- Remove the peach mixture from heat and allow it to cool.
- Purée the peach and thyme mixture in a blender until smooth.
- Spoon 3 tablespoons of peach purée into a champagne flute.
- Pour in Prosecco or sparkling wine and stir until combined. Serve cold. Garnish with peach slice.
