Aji Peruvian Rice
Ingredients
- 2 tablespoons butter
- 1 cup supherb farms fresh frozen aji pepper diced
- 2 tablespoons supherb farms fresh frozen garlic minced small
- 1 cup basmati rice
- 4 tablespoons supherb farms fresh frozen aji pepper purée
- 2 1/2 cups chicken stock
- 4 tablespoons supherb farms fresh frozen cilantro large
- 2 teaspoons salt
- 1 teaspoon black pepper

Preparation
- melt butter in a medium saucepan.
- add supherb farms fresh frozen aji peppers and garlic; cook over low heat for 5 to 10 minutes.
- add supherb farms fresh frozen aji pepper purée and stir well, then add chicken stock, salt and rice.
- bring to a boil, reduce heat to very low and simmer while covered for 30 to 45 minutes, until rice is tender.
- toss supherb farms fresh frozen cilantro and rice in a bowl then serve.
