S’chug Orecchiette with Herbed Labneh

Ingredients

  • 1 box Orecchiette
  • 1 medium Yellow onion — sliced thin
  • 1/4 cup SupHerb Farms Fusions® S’chug
  • 1 medium Eggplant — diced
  • 28 ounces San Marzano tomatoes — chopped
  • 5 tablespoons Extra virgin olive oil
  • 1/2 cup Labneh
  • 1/4 teaspoon SupHerb Farms Fresh Frozen Chives
  • 1/4 teaspoon SupHerb Farms Fresh Frozen Dill
  • 1/4 teaspoon SupHerb Farms Fresh Frozen Cilantro
  • to taste Salt and pepper

Preparation

  1. Bring a large pot of water to boil. In a large skillet, sauté the onion in 4 tablespoons olive oil for 2-3 minutes.
  2. Add eggplant and sauté for 3-4 minutes or until caramelized.
  3. Add tomatoes and SupHerb Farms Fusions® S’chug, bring to a simmer then season with salt and pepper to taste. Cook for 15 minutes.
  4. Combine the labneh with SupHerb Farms Fresh Frozen Chives, Dill and Cilantro, then season with salt and pepper.
  5. Cook pasta according to directions, drain and toss with sauce.
  6. Remove from heat and top with herbed labneh.
