Langoustine and Kentucky Country Banh Mi
Ingredients
- 4 cups Cooked Langoustines
- 1 cup Coconut Milk
- 1/2 cup Mayonnaise
- 1/4 cup SupHerb Farms Fusions® Thai Pesto
- 1 Cucumber — sliced thin
- 4 Brioche Rolls
- 1/2 ounce Sliced Kentucky Ham
Pickled Carrots and Radishes
- 1 cup Carrots — cut into matchstick-size strips
- 1 cup Radish — cut into matchstick-size strips
- 2 tablespoons SupHerb Farms Fresh Frozen Ginger — diced
- 2 cups White Vinegar
- 1 teaspoon Salt
- 1 cup Sugar

Preparation
- In a bowl, mix vinegar, salt and sugar and microwave for two minutes.
- Pour vinegar mixture over carrots, radishes and ginger and let sit for at least one hour.
- Chill and use.
- Mix coconut milk, mayonnaise, and SupHerb Farms Fusions® Thai Pesto in a bowl.
- Put Langoustine in a bowl and pour half of the Thai sauce over it. Mix it, adding sauce as needed until lobster is lightly dressed.
- Toast brioche rolls, fill with sliced cucumber, pickled mixture, 1 cup lobster and sliced country ham.
