S’chug Orecchiette with Herbed Labneh

Ingredients
- 1 box Orecchiette
- 1 medium Yellow onion — sliced thin
- 1/4 cup SupHerb Farms Fusions® S’chug
- 1 medium Eggplant — diced
- 28 ounces San Marzano tomatoes — chopped
- 5 tablespoons Extra virgin olive oil
- 1/2 cup Labneh
- 1/4 teaspoon SupHerb Farms Fresh Frozen Chives
- 1/4 teaspoon SupHerb Farms Fresh Frozen Dill
- 1/4 teaspoon SupHerb Farms Fresh Frozen Cilantro
- to taste Salt and pepper

Preparation
- Bring a large pot of water to boil. In a large skillet, sauté the onion in 4 tablespoons olive oil for 2-3 minutes.
- Add eggplant and sauté for 3-4 minutes or until caramelized.
- Add tomatoes and SupHerb Farms Fusions® S’chug, bring to a simmer then season with salt and pepper to taste. Cook for 15 minutes.
- Combine the labneh with SupHerb Farms Fresh Frozen Chives, Dill and Cilantro, then season with salt and pepper.
- Cook pasta according to directions, drain and toss with sauce.
- Remove from heat and top with herbed labneh.
