Smoked Pork Taquitos with Sautéed Onions and Aji Peppers

Ingredients

  • 2 tablespoons Butter
  • 1 cup Onion — sliced
  • 1 cup SupHerb Farms Fresh Frozen Aji Pepper Diced
  • 1 tablespoon SupHerb Farms Fresh Frozen Garlic Minced Small
  • 7 cups Pork — smoked and shredded
  • 2 tablespoons SupHerb Farms Fresh Frozen Cilantro Large
  • 1/4 cup SupHerb Farms Fresh Frozen Aji Pepper Purée
  • 1 cup Sour cream
  • 1 cup Easy melt cheese
  • 1 cup Queso fresco — crumbled
  • 2 tablespoons Lime juice
  • 12 Corn tortillas
  • Toothpicks — as needed

Preparation

  1. Heat butter until melted in a large sauté pan
  2. Add onions, SupHerb Farms Fresh Frozen Aji Peppers and SupHerb Farms Fresh Frozen Garlic Minced Small. Sauté for 5 to 10 minutes until translucent.
  3. Pull pan from heat and set aside.
  4. In a large bowl, combine smoked pulled pork, SupHerb Farms Fresh Frozen Cilantro Large, SupHerb Farms Fresh Frozen Aji Pepper Purée, sour cream, easy melt cheese, queso fresco, aji and onion mixture and lime juice. Mix well.
  5. Prepare a baking sheet by spraying it with nonstick cooking spray. Set aside.
  6. Dampen 2 paper towels and place corn tortillas between them. Microwave for about 1 minute; until tortillas are warm and pliable.
  7. Place one tortilla flat on a clean and dry surface. Keep the rest between the paper towels.
  8. Spoon about 2 heaping tablespoons of the pork mixture onto the tortilla; spread it evenly across the entire surface.
  9. Roll the tortilla up tightly and secure with toothpicks if needed. Place them seam-side down on a baking sheet. 1
  10. Repeat the filling process with remaining tortillas. 1
  11. Bake in oven until crispy, 14 to 16 minutes.

Serve immediately with Aji Crema sauce.
