The SupHerb Farms team recently participated at the 2022 Dot Innovations show in St. Louis, Missouri. One of the most pressing concerns at this year’s show was labor challenges. Over 80 percent of operators across foodservice segments still say they’re struggling to find and retain employees1. To combat labor challenges 25 percent of on-site operators are looking to transition toward more pre-made products2.

Consumers are beginning to dine out more, making menu innovation a priority once again for restaurants. Chain menu launches are currently at 86.4 percent of pre-COVID levels3. With current supply chain and labor constraints, operators are seeking simple ways to differentiate their menus. Sauces and condiments are a great way to introduce new flavors.
As flavor trial continues to grow and expand, 36 percent of consumers would like restaurants to offer more condiment mashups4. Flavor mashups often are the pairing of a classic condiment, such as ranch dressing or mayo, with a new flavor making it more approachable for guests. Sweet-heat mashups, such as mango salsa, are also a popular flavor mashup today on menus.
