Southeast Asian Island cuisines are special due to many diverse cultural influences, from Indian and Chinese to Islamic and Western. Colonization by Dutch, Portuguese, Spanish and later French and British spice traders that took place throughout the 16th and 17th centuries has impacted each country and its local cuisines differently. Because of the vast array of influences, cuisines in this region are balanced with umami-rich, spicy, salty and sweet flavors.
