West-Central Mexican cuisine is characterized by its robust flavors that combine both indigenous and European elements.. Spotlighting authentic recipes from this region on menus can create growth for foodservice operators. Opportunity dishes include Mexican stews such as Pozole, Chilayo and Birria, while trending flavors include arbol and guajillo chili peppers and achiote spice. Per author Rick Bayless, the West-Central culinary region has “Mexico’s most prominent (flavor) profile, the one least obviously chiseled from ancient Indian ways.” And, consumers are excited about this region’s cuisine with more than half (54%) wanting to see more of its influence on menus
